From 1983-1986, Baxter was on the varsity golf team. He lettered for three years and was captain for two years. He also received the most valuable player award twice.

Baxter previously was a sports agent for various professional athletes, including golfers, basketball players, football players and baseball players.

His coaching experience includes coaching a 15-member team comprised of 16-18 year olds in the Big League Baseball League. He has also coached PGA tour golfers, including Rex Caldwell, Frank Conner and Esteban Toledo. He has been head coach with various professional basketball teams in Eastern and Western Europe. In addition, he owned the Barcelona Howlers, a professional football team. He was also its general manager and head coach for two years.

"Almost immediately upon my visit to Schreiner University, I realized this was a special place. Meeting with staff, and various coaches, everyone was smiling, positive and I could tell there was great teamwork. I want to thank the President of Schreiner University, Dr. Charlie McCormick; Dean of Students, Dr. Charlie Hueber, and especially, Athletic Director Bill Raleigh, for hiring me to be the new Head Men's and Women's Golf Coach for Schreiner University. I could not be more excited and ready to go to accomplish the goals and the mission set forth by the University, the Athletic Department, and Mr. Raleigh. Schreiner is a premier academic University with an athletic department that has incredible resources and high expectations for their student athletes both on and off the field. They also have high expectations for the coaches, and I look forward to achieving the goals. Schreiner plays in an athletic conference comprised of other prestigious Universities. The commitment to the athletic program, and specifically, both golf teams is everything a coach could ask for. We will work hard to have academic excellence, be great citizens, and both the Men and Women's teams to compete for National Championships. I am ready for the challenge, and I am confident the student athletes are as well."
